Dean Hewitson founded his winery in 1998 after harvests in Burgundy, Bordeaux, Champagne, Italy and Oregon and a master's from UC Davis, and he holds some remarkable old ground — including a stand of Mourvèdre planted in 1883, the oldest known surviving planting of the variety anywhere. Gun Metal comes from a single site on Moculta Road in the Eden Valley, high in the Mount Lofty Ranges where growers moved Riesling in the 1960s for steelier, longer-lived wines. Ancient oxidised ferrous loams over shale, twenty-five-year-old vines cropped to just three tonnes a hectare, east-facing so the afternoon sun never hits it and ripening stretches out. The name describes both the grey stone in the vineyard and the wine's steely edge. Bone dry at 12% with no added sugar or acid: lime, lemon rind, white flowers and wet slate, chalky and pithy with razor-edged acidity. Austere if you are not used to the style, and superb with seafood, dumplings or hard cheese.
