Riesling

**Riesling** is a white grape from Germany's Rhine region, widely regarded as one of the noblest white varieties for its purity, transparency and ability to express place with startling precision. **In the glass** — pale in colour, with aromas of lime, green apple, apricot and, with age, a distinctive petrol note; the palate is bracingly high in acidity, light bodied and can range from bone dry to lusciously sweet. **Where it grows** — Germany's Mosel and Rheingau are the benchmarks, giving delicate, mineral wines, while Alsace produces richer dry styles and Austria, Australia's Clare and Eden Valleys and Washington State add their own signatures. **At the table** — superb with spicy Asian dishes, pork and shellfish. **Cellaring** — one of the great agers among whites, evolving remarkably over one to several decades.
