A cult collaboration between Alejandro Vigil — director of winemaking at Catena Zapata and the man behind their White Stones and White Bones Chardonnays — and Adrianna Catena. The fruit comes from Gualtallary in the Uco Valley, high-altitude calcareous ground around 1,300 to 1,400 metres, from vines of twenty years and more. What sets it apart is the ageing: fermented with wild yeast in 500-litre French oak, roughly a third new, then left in barrels that are deliberately not topped up so a veil of flor develops across the surface, exactly as in Fino Sherry or the Jura. The wine is not oxidised; the flor protects it while adding a savoury, nutty, saline dimension that Chardonnay does not otherwise have. Expect waxed lemon and green apple with hazelnut, chamomile and dried fruit, oyster-shell salinity and a chalky texture off the limestone. Full-bodied and creamy but taut rather than buttery, with a long, briny finish.
