Tasting profile
Structure: full-bodied, medium tannin, medium acidity, dry
Habemus Papam is Domaine Santa Duc's Châteauneuf-du-Pape, made by Benjamin Gras from organically and biodynamically farmed parcels at Le Pradel and La Font du Pape. Grenache-led with a substantial share of Syrah and a little Mourvèdre and Counoise, it is aged about 18 months in large oak tuns and clay amphorae rather than barrique. It is generous yet fresh: peppery plum and cherry with smoke, garrigue herbs and liquorice, on supple, fine tannins. It ages for well over a decade.
Serving: Serve at 16–18 °C.
