Syrah

**Syrah** is a red grape from the Northern Rhône in France, responsible for some of the world's most dramatic, savoury reds. Under the name Shiraz it became the flagship variety of Australia. **In the glass** — deep purple-black in colour, with aromas of blackberry, black pepper, smoked meat and violet; the palate is full bodied with firm tannin and moderate acidity. **Where it grows** — the Northern Rhône appellations of Hermitage and Côte-Rôtie are its spiritual home, giving peppery, elegant wines, while Australia's Barossa Valley produces richer, jammier Shiraz; it also does well in the Southern Rhône blends, South Africa, Chile and Washington State. **At the table** — excellent with grilled meats, game and hearty stews. **Cellaring** — structured Northern Rhône and top Australian examples age superbly for a decade or more.
