Tavel — the only appellation in France permitted to make rosé and nothing else, and the reason it is taken more seriously than most pink wine. Grenache and Cinsault with a little white Clairette, given real skin contact rather than a brief bleed, so it comes out deep salmon-pink and genuinely structured. Red cherry, redcurrant and blood orange with garrigue herb, white pepper and a stony finish, medium-bodied with a faint tannic grip and firm acidity. A rosé built for the table rather than the aperitif hour — serve it cool but not ice-cold, and give it food.
