A white blend of Chardonnay and Savagnin from Pupillin, made by Emmanuel Houillon at Maison Pierre Overnoy, the estate that became a reference for natural wine in the Jura; Houillon has run it since 2001. The grapes come from the domaine's own Pupillin vines, and the wine gets a long élevage in old wood and is bottled without added sulphur. Expect yellow orchard fruit and lemon with a nutty, spiced depth from the Savagnin and long ageing, held together by high acidity. Rare and highly sought after, it is built to age for many years.
