Castaldo

Tasting profile

Structure: medium-bodied, medium tannin, high acidity, dry

Carpineto's Castaldo is a Chianti Riserva grown in the hills just outside the Chianti Classico zone. It is mostly Sangiovese with Canaiolo, aged 8–10 months in oak casks of different sizes and then in concrete and bottle. Expect morello and red cherry, violets and dried herbs over firm, food-friendly acidity and medium, fine-grained tannins. With a few years in bottle it picks up leather and spice notes.

Serving: Serve at 15–17 °C.
