"The secret barrel" is a collaboration between Stefano Amerighi, best known for his Syrah in the hills of Cortona, and the Paris sommelier duo behind Vin des Potes — and unusually for him it is Sangiovese, from a young, south-west-facing plot on clay and limestone. The making is deliberately old-fashioned and hands-off: part whole berries, part foot-crushed, fermented spontaneously in small concrete vats with a long maceration and no added sulphur or temperature control. The result is bright and unpolished in the best sense — sour cherry and pomegranate, a blood-orange twist, dried herbs and a wet-clay savour, with fine tannins and lively acidity. Serve it cool.
