Topaque is Muscadelle under its modern Australian name — the style was called Tokay until Australia relinquished the European name, and it is the quieter counterpart to Rutherglen Muscat. Where Muscat gives raisin and rose, Topaque gives cold tea, malt, butterscotch and a distinctive fish-oil complexity that sounds unappealing written down and is anything but in the glass. Made the same way: fruit picked raisined, fortified, then aged oxidatively in old wood through north-east Victoria's hot summers, with older material blended into younger. The same four-tier classification applies — Rutherglen, Classic, Grand and Rare — each step requiring a greater average blend age. Amber to deep brown, viscous and intensely sweet with a spirit lift. Stable indefinitely; an opened bottle lasts months.
