Tasting profile

Structure: full-bodied, medium acidity, sweet

Topaque is fortified Muscadelle, a Rutherglen style found essentially nowhere else in the world — the name was adopted in 2010 when Australian producers gave up the term Tokay. Rare is the top of the four-tier classification, requiring an average blend age of at least twenty years and usually carrying far older material through the solera. Grapes are raisined on the vine, fortified, then aged in old barrel in hot sheds where evaporation concentrates the wine each summer. Amber and viscous: butterscotch, cold tea, malt, raisin, dried fig and toffee, deeply sweet with a clean spirit lift that keeps it from becoming syrupy. More savoury and tea-like than Rutherglen Muscat, which is the useful distinction between the two.
