Boutinot have been making wine in the Mâconnais for more than thirty years, and Genetie — a name found cut into a listed stone pillar in their building — is their Bourgogne Blanc, drawn from a twelve-hectare parcel of forty-year-old Chardonnay at Bussières on clay-limestone. It is southern Burgundy in character rather than Côte d'Or: lemon zest and white peach with an acacia lift, and a creamy, faintly buttery texture from the roughly tenth of the blend aged in barrel, closing dry and stony. Medium-bodied with bright acidity, and a level above most regional Bourgogne thanks to the vine age. Serve at 11-12°C with cream-sauced chicken or fish.
