Tasting profile

Structure: light-bodied, low tannin, high acidity, dry

Les Pivoines — peonies — is Boutinot's Beaujolais-Villages, the tier above straight Beaujolais, drawn from granite-based sites in the north of the region where Gamay gets more perfume and grip than it does on the flatter southern clays. It is made for drinking rather than pondering: bright red cherry and raspberry, a floral top note, a twist of black pepper and the dry mineral finish granite soils give. Light-bodied, low in tannin and high in acidity, which is what makes it so easy at the table and unusually good lightly chilled. Serve it at 13-14°C, cooler than you would think for a red, and drink it young while the fruit is still crunchy.
