Structure: light-bodied, low tannin, high acidity, off-dry

Prosecco is made from Glera in the tank method, which keeps the wine's floral, primary fruit intact rather than developing the bready complexity of a bottle-fermented sparkler. "Extra Dry" is the point of confusion on the label: in Prosecco's scale it sits sweeter than Brut, with noticeably more residual sugar — usually around 12 to 17 grams per litre — so expect an openly fruity, gently sweet impression rather than a bone-dry one. Green apple, white peach and pear over acacia blossom and a lemon-zest lift, light-bodied with a soft, frothy mousse. Serve it properly cold, and drink it young.
