Tasting profile
Structure: full-bodied, high tannin, medium acidity, dry
Bolla's Amarone della Valpolicella Classico Riserva, sold as "Le Origini" in honour of the house's pioneering 1950 Amarone. Corvina, Corvinone and Rondinella from the Classico hills are dried for months before fermentation, then the wine matures for about four years, first in 750-litre barrels and then in large Slavonian oak casks, before a further rest in bottle. Deep garnet and around 16.5% alcohol, with ripe cherry, plum and dried fig, dark chocolate, vanilla and sweet spice with a touch of tobacco. Full-bodied and powerful, with firm, velvety tannins and enough acidity to carry a long finish. Decant for an hour and serve at 18–20°C.
