A traditional L'Étoile blanc, Chardonnay and Savagnin raised in barrel under a veil of yeast — the Jura's sous voile method — and it wears that élevage openly: golden in the glass, with green walnut, toasted almond and dried apple over a warm curry-spice note, then a saline, insistent finish. Bright acidity keeps the richness taut rather than heavy. This is a wine that divides a table on first encounter and wins most of them back by the second glass; give it Comté, a poulet à la crème, or anything with morels, and it makes complete sense.
