Château Chalon Vin Jaune

Tasting profile

Structure: full-bodied, low tannin, high acidity, dry

Château-Chalon is the Jura appellation for vin jaune alone: Savagnin aged at least six years and three months in barrel under a veil of flor yeast, without topping up, and released in the squat 62 cl clavelin. This is the Maire family's bottling. Bold and oxidative: toasted walnut, curry spice and fenugreek with dried apricot, beeswax and a green-apple edge, on searing acidity and a very long, salty finish. Among the longest-lived dry white wines.

Serving: Serve at 10–12 °C.
