Château-Chalon — the Jura appellation that makes only vin jaune, and the benchmark for the style. Savagnin from marl slopes, fermented dry then left in barrel for six years and three months without topping up, developing a veil of yeast that protects the wine while it oxidises slowly beneath. Bottled in the 62cl clavelin, the volume said to remain from a litre after that time. Walnut, curry spice, green apple and bruised almond over a saline, penetrating dryness — utterly dry despite the richness of aroma, and one of the longest-lived white wines in the world. Stéphane Tissot is among Arbois' most searching growers.
