Furmint

**Furmint** is a white grape most associated with the Tokaj region of Hungary, where it is the backbone of the famous sweet Tokaji Aszú wines made from botrytis-affected grapes. Its naturally high acidity and susceptibility to noble rot make it ideal for both sweet and, increasingly, fine dry wines. **In the glass** — bright and firm, with orchard fruit, quince, citrus and a smoky, mineral edge; searing acidity gives it energy and a long finish, and it takes well to oak and lees ageing. **Where it grows** — the star of Tokaj in Hungary, whose vineyards extend across the border into Slovakia; it is also grown in Slovenia, where it is called Šipon, and around Somló in western Hungary. Dry Furmint has become a serious category in its own right. **At the table** — dry versions suit roast poultry and richer fish; sweet Tokaji pairs beautifully with blue cheese and fruit desserts. **Cellaring** — excellent ageing potential; the great sweet wines can last for decades, and top dry versions reward several years.
