Tokaji Aszú is made by kneading botrytised aszú berries, picked one by one, into a base wine and refermenting — the puttonyos number counts the hods of berries added, so five is richly sweet, around 120 grams of residual sugar and upward. What keeps it from cloying is Furmint's ferocious acidity, which cuts through the honey and dried apricot and gives the wine its extraordinary longevity. Long ageing in small casks in the cold, mould-lined cellars of the Tokaj hillsides adds a distinctive oxidative note of walnut, quince and saffron over the candied citrus. Amber-gold, unctuous, and long. This bottling comes from the Tokaj trading house at Sátoraljaújhely rather than one of today's boutique estates.
