Kairós

Tasting profile

Structure: full-bodied, high tannin, medium acidity, dry

Kairós is the signature wine of Celestino Gaspari's Zýmē in San Pietro in Cariano, a Rosso Veneto IGT blended from fifteen varieties, eleven red and four white, all from the estate's own plots in the province of Verona. The core is the Valpolicella trio of Corvina, Corvinone and Rondinella, joined by Bordeaux varieties, Syrah, Teroldego, Oseleta, Croatina, Sangiovese and Marzemino, with Garganega, Trebbiano, Sauvignon and Chardonnay; part of the fruit is dried before fermentation. Dense and layered: black cherry, dried plum and blackberry with dried flowers, spice and cocoa, on firm, ripe tannins. Built for long ageing. Decant and serve at 17–18°C with braised meats and game.
