Torgiano Rosso Riserva is one of only two DOCGs in Umbria, a small zone south of Perugia, and this is Tenute Baldo's flagship within it. Sangiovese leads with Merlot and Cabernet Sauvignon in support, the bunches selected twice by hand — once in the vineyard and again in the cellar — then fermented at controlled temperature with a long twenty-five-day maceration, the seeds separated part-way through to keep the tannins fine rather than hard. Malolactic in steel, then twenty-four months in French barriques resting on fine lees, a further period in steel, and at least twelve months in bottle before it is released. The result is intense ruby with garnet lights and around 15.5% alcohol: red-fruit preserve, cherry and amarena over sweet spice, vanilla, cocoa and aromatic herbs, full-bodied and warm with a long, harmonious finish. Serve at 16 to 18°C with roast meats, ragù, game or aged hard cheese.
