Tasting profile
Structure: full-bodied, medium tannin, medium acidity, dry
Valpolicella refermented on the drained skins of the Amarone — that is what ripasso, "repassed", means, and it is what gives the wine its extra weight, alcohol and depth over a straight Valpolicella. Dark cherry and dried plum with cocoa, sweet spice and a raisined edge inherited from those skins, full-bodied and rounded, with the bitter-almond twist the local varieties always leave on the finish. Richer than Valpolicella, gentler than Amarone, and it sits happily between the two.
Serving: Serve at 16–18 °C.
