Stanton & Killeen have made fortified wine at Rutherglen since 1875, and unusually for Australia they work with the authentic Portuguese varieties — Touriga Nacional and Tinta Cão alongside Shiraz — rather than substituting local grapes. The method follows Douro practice: ferment briefly, then fortify with spirit to arrest it and leave natural sugar behind. Dark plum and blackberry with dried fig, warm baking spice, chocolate and a savoury edge. Full-bodied and sweet, high in alcohol, with real tannic grip that resolves slowly over decades. Throws a heavy crust with age.
