Tasting profile

Structure: full-bodied, high tannin, medium acidity, dry

St Hugo's Black is a two-region blend: Shiraz from the Barossa Valley for flesh and dark, plush fruit, Cabernet Sauvignon from Coonawarra's terra rossa for a spine of cassis, cedar and fine limestone-driven tannin. The result is full-bodied but structured rather than merely rich — blackberry and dark plum in front, black olive and mocha oak behind, and a firm, drying finish that still needs time to settle. A wine for the table, and for substantial food.
