Tasting profile
Structure: medium-bodied, medium tannin, medium acidity, dry
Valdimezzo is the Ripasso Valpolicella Superiore of Sartori di Verona, the family house in Negrar. Corvina, Corvinone and Rondinella with a little Croatina, refermented on the dried-grape skins left over from Amarone. The ripasso process adds weight, richness and dried-fruit depth to a Valpolicella base. Ripe and dried cherry with plum, cedar, dried herbs and a touch of cocoa, on soft tannins with bright acidity; bottled unfiltered in recent vintages. Medium-bodied and around 13.5%, it is best within about four years of the vintage. Serve at 16–18°C with braised meats, risotto or aged cheese.
