Tasting profile

Structure: full-bodied, high tannin, medium acidity, dry

An oak-aged Saint-Mont red from the Gascon hills of south-west France, from the Plaimont cooperative. It is a Tannat-led blend with Fer Servadou (locally Pinenc) and Cabernet Sauvignon, matured in oak barrels before release. Tannat gives dark fruit and firm tannin, Fer Servadou adds spice and freshness, and the oak brings toast and vanilla. With bottle age the tannins soften and leather and liquorice come through. Serve at 14–16°C with south-west classics such as duck confit, magret or cassoulet.
