As its name hints, it is one of the most tannic varieties in the wine world. **In the glass** — Deeply coloured and full-bodied, it shows blackberry, plum, liquorice and smoky, earthy notes, framed by firm acidity and a formidable grip of tannin that softens with time or careful winemaking. **Where it grows** — In Madiran and the wider Gascony region it makes dense, structured reds, while in Uruguay it produces a slightly rounder, more approachable style that has become a national calling card. It is also grown in Argentina, Brazil and parts of the USA. **At the table** — A natural match for hearty meat dishes such as cassoulet, lamb or grilled steak. **Cellaring** — Its tannin and structure reward patience; good examples age well over many years, mellowing and gaining complexity.
