Sweet Bergerac is made in the Monbazillac idiom from Semillon with Sauvignon Blanc and Muscadelle, picked late and affected by botrytis — the noble rot that shrivels the berries and concentrates everything in them. The Dordogne's autumn mists coming off the river are what make it possible, the same mechanism that produces Sauternes a little to the west. Golden in youth, deepening to amber, with apricot, honey and candied citrus over a rich, unctuous palate. The crucial thing is that concentrated sugar and acidity together make these among the most durable wines in existence: thirty years is unremarkable, and with age the fruit turns to marmalade, dried fig and toasted nut with a saffron edge. Serve it cold in small glasses, with blue cheese or foie gras rather than dessert.
