Sémillon

**Sémillon** is a white grape from Bordeaux in France, famous as the backbone of the world's greatest sweet wines and an increasingly respected component of fine dry whites. **In the glass** — when dry it is fuller-bodied and relatively low in acidity, showing lemon, waxy lanolin and hints of honey; when affected by noble rot it turns lusciously sweet, with apricot, marmalade and botrytis richness. **Where it grows** — its heartland is Bordeaux, where it stars in the sweet wines of Sauternes and Barsac and blends with Sauvignon Blanc for dry whites. It is central to Australia's Hunter Valley, which makes remarkable long-lived dry styles, and is also grown in South Africa and elsewhere. **At the table** — dry Sémillon suits fish and poultry, while the sweet wines are classic with foie gras and blue cheese. **Cellaring** — both styles age beautifully; Sauternes and Hunter Sémillon can evolve gracefully for many decades.
