Blanc Comme Neige is the vintage Blanc de Blancs of the Hénin family of Aÿ (Pascal Hénin, now run by his son Romain): Chardonnay from the Chouilly grand cru, gently pressed and fermented in tank to keep its delicacy, aged long on the lees and dosed Extra Brut. Lemon, green apple and white flowers with brioche and toasted almond over a chalky backbone.
