Conte di Valle is the Valpolicella Ripasso Superiore from the Cottini family's Palazzo Maffei label in the hills of Verona, built on the classic Valpolicella trio of Corvina, Corvinone and Rondinella. Ripasso means the young wine is passed back over the dried-grape skins left from making Amarone, which gives it extra depth, colour and a gentle raisined richness. This one then matures in barrels and large wooden casks. Expect dried cherry, plum and blackberry with notes of cocoa, cinnamon and tobacco, a generous, warming palate and smooth tannins. Serve it at cool room temperature with braised beef, roast pork, mushroom risotto or mature Monte Veronese cheese. It opens up a couple of years after the vintage and drinks beautifully for the better part of a decade.
