Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Les Empreintes (the footprints) is Laherte Frères' expression of Chavot, south of Épernay: a vintage Champagne of about half Pinot Noir and half Chardonnay (including the aromatic Chardonnay muscaté) from flinty clay over chalk, barrel-fermented and bottled with little or no dosage. Vinous and textured, with red apple and pear, a smoky, flinty edge and brioche over a chalky backbone.

Serving: Serve at 6–8 °C.
