Malvazija Istarska is Istria's native white and the peninsula's calling card, grown on red terra rossa and white limestone either side of the Croatian-Slovenian border. In its fresh, unoaked form it gives green apple, pear and acacia blossom over a faintly bitter almond finish and a saline, maritime minerality. Medium-bodied and dry with high acidity, and more textured than most Mediterranean whites — there is a waxy weight to the palate that makes it a food wine rather than an aperitif.
