Paul Sauer is Kanonkop's flagship and one of South Africa's most celebrated reds, a Bordeaux-style blend led by Cabernet Sauvignon with Cabernet Franc and Merlot from the estate's vineyards on the lower Simonsberg slopes, Stellenbosch. Fermented in open concrete kuipe with manual punch-downs and aged about two years in new French oak, it is powerful and long-lived: blackcurrant and black cherry with cedar, graphite, tobacco and dark chocolate, on dense, firm tannins. It needs years and ages for decades.
