Kanonkop are best known abroad for Pinotage, but Cabernet Sauvignon is the estate's other pillar, and the best parcels go either into this bottling or into their icon blend Paul Sauer. The fruit grows on the Simonsberg foothills in Stellenbosch — decomposed granite over Hutton and Clovelly soils, vines averaging around thirty years, dryland farmed with only supplemental water, cropped to four tonnes a hectare. Fermentation happens in open-top concrete fermenters, as it has here for decades. The result is a big, robust wine that nonetheless keeps its shape: violets and licorice on the nose, a layered, silky palate of ripe plum and cassis, cardamom and cedar extending a long finish, all carried on a finely carved tannic frame at around 15% alcohol. Serve it with red meat or something properly spiced, and give it air.
