Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Bois de la Croix is Fabien Duperray's Mâcon-Fuissé at Domaine Jules Desjourneys, from a sunny south-east-facing sector of Fuissé on volcanic tufa, sandstone and schist, aged 22 months in tank only, Chablis-style, then held almost two more years in bottle before release. Crisp pear, green apple, mint, white flowers and lemon oil with a buttery-pastry note; satiny and racy with a saline finish.
