Mosel Riesling from one of Germany's most revered estates, and a wine that rewards patience more than almost any white made. Spätlese means later-picked and riper than Kabinett, leaving clear residual sugar held in balance by ferocious acidity: sweet in measurement, refreshing in effect. Green apple, white peach and lime with the wet-slate minerality of the Graach hillside and a honeyed floral lift, at around 7.5% alcohol. Prüm wines are famously closed and sometimes sulphurous on release; give them years and they become extraordinary.
