JJ Prüm's Kabinett from the Graacher Himmelreich, the large slate slope above Graach, is light in alcohol and gently sweet, yet built to age. Juicy orchard fruit and citrus sit over racy, mouthwatering acidity and a distinctive slaty minerality. In the reductive house style young bottles can be smoky and closed on opening; with years in bottle the sweetness recedes, and honeyed, petrol-tinged complexity emerges.
