**Germany** is one of the world's great white wine countries and the spiritual home of Riesling, producing wines of remarkable purity, acidity, and ageing potential from some of the coolest vineyards in Europe. Its steep river valleys yield wines that balance featherlight delicacy with intense flavour. **Signature wines** — Riesling above all, in styles from bone-dry (trocken) to lusciously sweet, alongside increasingly serious Pinot Noir (known here as Spätburgunder) and other Pinot family whites like Grauburgunder and Weissburgunder. **Key regions** — the Mosel, the Rheingau, the Pfalz, Rheinhessen, the Nahe, and Baden. **Good to know** — German wine labels traditionally grade quality by grape ripeness at harvest, using the Prädikat scale that runs from Kabinett through Spätlese and Auslese up to the rare, sweet Beerenauslese and Trockenbeerenauslese. This ripeness ladder means a single vineyard can produce everything from a crisp dry wine to an unctuous dessert wine depending on when the grapes are picked.
