Aged for over six years under a veil of flor in barrel before ever being bottled, this Arbois Vin Jaune is deliberately oxidative: walnut, curry spice, dried fruit and hay over a dense, full-bodied frame with searing acidity that keeps it fresh rather than tired. No fruit primary character survives the process, and none is meant to. It is built for Comté, morel-laced roast chicken and coq au vin jaune.
