Vin jaune is one of the strangest and greatest wines in France: Savagnin left in an untopped cask for six years and three months, protected only by a film of yeast — the voile — that forms on the surface and slowly transforms the wine underneath. It is bottled in the squat 62cl clavelin, the volume said to remain from an original litre after evaporation. The Arbois co-operative is the appellation's largest producer and a dependable source. The flavours are unmistakable: walnut, curry spice, dried apricot, green almond and toasted bread, bone dry and searingly fresh, with a finish that goes on for minutes. Serve at cellar temperature, not chilled, and expect an opened bottle to keep for weeks rather than days.
