Dôle

Tasting profile

Structure: medium-bodied, medium tannin, medium acidity, dry

Dôle is the Valais's classic red blend: mostly Pinot Noir with Gamay (and sometimes a little of other red varieties), which by law must lead the blend over Gamay. This one is from the Fernand Cina winery in Salgesch, the Valais village known for its Pinot Noir. Juicy red cherry, raspberry and strawberry with a floral, violet note and a hint of earthy spice, on supple, medium tannins. A friendly everyday red for Swiss mountain cooking. Serve slightly cool (14–16°C) with dried meats, poultry, veal or raclette.
