Tasting profile

Structure: full-bodied, high tannin, medium acidity, dry

Domaine Gayda's flagship red, an organic Syrah-led blend with Grenache and a little Cinsault from the Languedoc hills, bottled as IGP Pays d'Oc. Syrah is partly raised in new Burgundy barrels and the Grenache and Cinsault in older wood, giving a full-bodied, dark-fruited wine: black cherry and blackberry with liquorice, black pepper and a violet lift, on firm but ripe tannin. Built to improve in bottle for a decade.
