Tasting profile

Structure: full-bodied, high tannin, medium acidity, dry

Jouvet is François Villard's Cornas, 100% Syrah from relatively young vines on the decomposed granite of the appellation's steep slopes in the northern Rhône. Macerated about ten days in open wooden and steel vats, then aged about eighteen months in older barrels, so the oak stays in the background. Plum and blackberry with black pepper, liquorice and olive, turning to forest floor with age; rich and concentrated fruit over long, dry, firm tannin, with the wildness Cornas is known for.
