Tasting profile
Structure: full-bodied, high tannin, medium acidity, dry
Laurent Vaillé's Domaine de la Grange des Pères, at Aniane in the Hérault, makes one of the most celebrated reds of southern France, bottled as IGP Pays d'Hérault. It blends Syrah and Mourvèdre with Cabernet Sauvignon and a little Counoise; each variety is vinified separately, then aged about two years in barrel. Deep and tightly wound, with black fruit, garrigue, olive, leather and graphite on firm, fine tannins. It needs years in the cellar.
