Frappato

Tasting profile

Structure: light-bodied, low tannin, high acidity, dry

COS, the biodynamic Vittoria estate that helped put south-east Sicily back on the map, makes its Frappato with native-yeast fermentation and about nine months in concrete, so nothing masks the grape. It is pale ruby and perfumed, with wild strawberry, red cherry and pomegranate lifted by violet and a peppery, herbal edge; the palate is light, juicy and bright with barely-there tannins. Serve it slightly cool: it is one of the few reds that sits as happily with swordfish or tuna as with charcuterie and Sicilian vegetable dishes.
