COS are the Vittoria estate that led Sicily's return to terracotta, ageing much of their range in amphorae buried in the cellar floor, and Ramí is their white: an even blend of Inzolia and Grecanico with a short spell on the skins. That skin time is what gives the wine its shape — a faint tannic grip and a deeper, more savoury register than a conventional Sicilian white. Expect yellow apple and orange peel, an almond note, dried Mediterranean herbs and a distinctly saline finish. Dry, textural, and best served cool rather than cold, with food.
