Coutet is a Premier Cru Classé of 1855 and the largest estate in Barsac — the commune within Sauternes that keeps its own name because its flatter, more limestone-influenced ground gives a lighter, more nervy wine than the Sauternes hills. Sémillon dominates, with Sauvignon Blanc for citrus tension and a little Muscadelle for perfume, all shrivelled by the noble rot that the autumn mists off the Ciron bring. Apricot, honey and marmalade with the saffron note botrytis leaves behind, and behind all that an acidity so bright the wine finishes clean rather than cloying. Sweet and full-bodied, but the freshest kind of Sauternes.
