Napa Valley Cabernet Sauvignon

Tasting profile

Structure: full-bodied, high tannin, medium acidity, dry

Chappellet's Napa Valley Cabernet, the bottling the estate labels "Signature", comes largely from its rocky, high-elevation Pritchard Hill vineyards. Cabernet Sauvignon is blended with smaller amounts of Petit Verdot, Malbec and Merlot and aged in French oak. Expect a concentrated mountain-grown style: cassis, black cherry and plum with cedar, sage and other wild herbs, dark chocolate and graphite. The tannins are firm and ripe and the finish is fresh and mouthwatering. Approachable young with a decant, it rewards a decade or more in the cellar.

Serving: Serve at 16–18 °C.
